recipe ... yum yum

Frozen Apple Coffee Cake

I got this recipe from a lady at church, who got it from someone else, who got it from someone else. So, I don't know quite who to credit for it. Someone certainly deserves credit for this yummy treat!

Cake:

½ cup margarine, softened
1 cup sugar
3 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup sour cream
2 cups apple, chopped

Topping:

¼ cup margarine
2 teaspoons cinnamon
1 ½ cups brown sugar
1 cup walnuts, chopped

Using cake ingredients, cream the margarine, sugar, eggs, and vanilla. Add dry ingredients, then sour cream. Fold in apples. Put in two 8-inch greased round cake pans (disposable). For topping, cut margarine into brown sugar and cinnamon; add nuts. Put on top of unbaked cakes. Cover with foil and freeze. Bake from frozen, uncovered at 350 degrees for 50-55 minutes.
